Fruit in brandy
Serves 4-6
Preparation time: 15 minutes
Ingredients
225g (8oz) fruit (cherries, peaches, plums, apricots)
juice of 1 large orange or 4 tablespoons fresh orange juice
100g (3 1/2 oz) granulated sugar
100ml (3 1/2 fl oz) brandy
1. Measure 300ml (1/2 pint) water with the orange juice into a saucepan.
2. Arrange the apricots in a sterilised jar.
3. Make a light syrup by dissolving the sugar into the pan. Bring to the boil for 2 minutes, then cool.
4. Add the brandy to the syrup and pour over the fruit, making sure that all the fruit is covered.
5. Seal, cool and store in a cool place for 3 weeks before using.
Give as a gift or use as a dessert with ice cream or greek yogurt.
Sterilised jar. If you can, use a half-litre kilner jar (available from most hardware stores). Wash in hot soapy water, rinse thoroughly in very hot water and drain. Put it onto a baking sheet and place in an oven preheated to Gas Mark 1/140C/275F for 10 minutes, then remove and cover with a clean tea towel until ready to use.
